Easy Chicken Noodle Soup
Delicious and simple - the only chicken noodle soup recipe you'll need to warm your body and soul. Make a big batch for meal prepping (freeze and store for 3 months), hosting or potlucks. Adapted from https://www.youtube.com/@samswallet
Ingredients
- 1- 2 packs chicken thighs
- 1 large white or sweet onion
- Carrots
- Celery
- 2-3 cloves garlic
- Pasta (any type)
- Olive oil
- Chicken stock or water
Method
- In a 8-quart pot, drizzle olive oil on high heat and add chicken thighs. Make sure the oil covers the bottom of the pot so the chicken doesn't stick.
- Dice roughly equal amounts of onion, carrots and celery. Add the vegetables and diced garlic to the pot.
- Add chicken stock or water (or a combination) and fill to the top of the pot.
- Cover pot and bring to a boil. Turn down the heat and let it simmer for 15 minutes.
- Take out the chicken and let it cool on a plate. Meanwhile, add your pasta (could even be spaghetti noodles broken into smaller pieces).
- Shred the chicken and put back in pot. If using more water than chicken stock, add salt to taste.
