Japanese Curry with Ground Pork

There are so many variations of Japanese curry. I like this version because it is an easy way to feed my toddler protein and vegetables. I also like the sweetness the apple adds to counterbalance the pork.

Japanese Curry with Ground Pork

Ingredients

  • 1 lb ground pork
  • 1 large white or sweet onion
  • Carrots
  • 1 apple
  • 4 - 5 servings Japanese curry blocks (any brand - I like to mix two brands)
  • (Optional) 2 cloves garlic
  • Olive oil

Method

  1. Prepare the vegetables: dice the onion, carrots and apple and optionally garlic.
  2. Heat the oil on high. Add ground pork and let it brown at the bottom before sautéing to cook the rest of the pork.
  3. Add diced onion, garlic (if using), carrots and apple. Sauté for a minute.
  4. Fill with water to cover the ingredients. Bring to a boil, then add the curry blocks. Cover and turn down the heat to simmer for 15 minutes or until the carrots are soft.
