Japanese Curry with Ground Pork
There are so many variations of Japanese curry. I like this version because it is an easy way to feed my toddler protein and vegetables. I also like the sweetness the apple adds to counterbalance the pork.
Ingredients
- 1 lb ground pork
- 1 large white or sweet onion
- Carrots
- 1 apple
- 4 - 5 servings Japanese curry blocks (any brand - I like to mix two brands)
- (Optional) 2 cloves garlic
- Olive oil
Method
- Prepare the vegetables: dice the onion, carrots and apple and optionally garlic.
- Heat the oil on high. Add ground pork and let it brown at the bottom before sautéing to cook the rest of the pork.
- Add diced onion, garlic (if using), carrots and apple. Sauté for a minute.
- Fill with water to cover the ingredients. Bring to a boil, then add the curry blocks. Cover and turn down the heat to simmer for 15 minutes or until the carrots are soft.
