Simple Ginger Scallion Chicken

This is a simplified version of the Cantonese "white cut chicken with ginger scallion sauce" (白切雞配薑蔥醬).

Ingredients

  • 4 chicken drumsticks
  • 4 stalks scallions
  • Ginger (fresh, or 1-2 frozen diced ginger cubes from Trader Joe's)
  • Olive oil
  • (Optional) Salt

Method

  1. Poach the chicken: Boil a pot of water with 1 scallion and 2 thin slices of ginger (skip ginger if using frozen diced cubes). Add chicken drumsticks and bring to a boil again. Bring the heat to low, cover, and simmer for 10 minutes. Turn off the heat and let the chicken sit in hot water for another 10 minutes. Take the chicken out and cool on a plate.
  2. Meanwhile, keep chopping the rest of the scallions and ginger (if using fresh) into almost a mush and place in a small bowl.
  3. Heat a good amount (5-6 Tbsps) of olive oil on high heat. Right before smoking, pour the hot oil into the bowl of scallion and ginger. If using diced frozen cubes, the oil should start to defrost the cubes. Mix well (optionally add salt to taste) and drizzle over poached chicken.
