Taiwanese “Turkey” Rice
Turn every part (including bone) of your $5 Costco rotisserie chicken (or leftover Thanksgiving turkey) into this mouth-watering turkey/chicken rice. Serving size: 4
Ingredients
- Rotisserie chicken (or leftover Thanksgiving turkey)
- 4 - 5 shallots
- Chicken stock
- 2 Tbsp lard (or butter/olive oil)
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 tsp salt
- (Optional) 1 tsp chicken bouillon
- Rice
Method
- Tear the chicken meat off the bone and shred by hand.
- Make chicken stock (skip if using store-bought chicken stock): add the bones in a pot and fill water to cover. Bring to a boil, then turn down the heat to simmer for at least 30 minutes. Slice shallots while waiting.
- Use the chicken stock to cook rice.
- Meanwhile, add lard to a wok on medium high heat. Stir fry the shallots until semi-translucent. Add soy sauce, sugar, salt, chicken bouillon (if using) and enough chicken stock to cover. Simmer until half reduced.
- Drizzle the shallot sauce over chicken and serve over rice.
