Taiwanese “Turkey” Rice

Turn every part (including bone) of your $5 Costco rotisserie chicken (or leftover Thanksgiving turkey) into this mouth-watering turkey/chicken rice. Serving size: 4

Taiwanese “Turkey” Rice

Ingredients

  • Rotisserie chicken (or leftover Thanksgiving turkey)
  • 4 - 5 shallots
  • Chicken stock
  • 2 Tbsp lard (or butter/olive oil)
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 tsp salt
  • (Optional) 1 tsp chicken bouillon
  • Rice

Method

  1. Tear the chicken meat off the bone and shred by hand.
  2. Make chicken stock (skip if using store-bought chicken stock): add the bones in a pot and fill water to cover. Bring to a boil, then turn down the heat to simmer for at least 30 minutes. Slice shallots while waiting.
  3. Use the chicken stock to cook rice.
  4. Meanwhile, add lard to a wok on medium high heat. Stir fry the shallots until semi-translucent. Add soy sauce, sugar, salt, chicken bouillon (if using) and enough chicken stock to cover. Simmer until half reduced.
  5. Drizzle the shallot sauce over chicken and serve over rice.
